(Serves four as a starter, one (greedy piggy) or two as a main)

Spicy Ribs Served

It doesn’t get much easier, or tastier, than this.

  • 1kg pork ribs
  • Finely chopped red chilli and garlic

Spicy Ribs Ingredients

Put the ribs in a roasting tin, cover them with the chopped chilli and garlic and a generous sprinkle of sea salt. Heat oven to 150° Celsius.

    Spicy Ribs Roasting Tin

Cover the ribs tightly with oven foil and put in the oven. Cook for a minimum of two hours, the longer you leave them in, the more tender they get. On this occasion I cooked them for three hours, but if you can, leave them in for four. This leaves you with ribs where the meat falls off the bone.

Great served with chips and a salad, but also very enjoyable on their own. Whatever you do, have them with a big glass of cold beer.

    Happy finger licking.
